Recipe of the Month

 

Green pumpkin latkes

We inadvertently picked a green pumpkin in our garden and then wanted to cook it up rather than waste it so… green pumpkin latkes were born.  Delicious!

Ingredients:
1 medium green pumpkin (size of a cantaloupe or so), grated
1 Tbsp. ground flax soaked in 3 Tbsps. water to soften (or use 1 egg)
3 green onions, minced
1/4 cup brown rice flour
1/4 tsp. sea salt & fresh cracked pepper
oil for frying

Directions:
Grate pumpkin into a bowl.  Stir in sticky flax or egg, onions, rice flour and season with salt and pepper.  Heat 3 Tbsps. oil in pan and drop mixture by ¼ cupful into oil cooking until brown on each side (flip only once).  Serve with yogurt, sour cream or your favourite sauce.
